May I offer a toast to all with my favorite nonfattening, nonalcoholic, egg-free eggnog.
Why would I leave the best ingredients out of my eggnog? I don’t know about you, but this GardenLady’s annual New Year’s resolution is always to lose weight: so after a December of celebrating, I am going to try to avoid heavy whipping cream; since I am the designated driver on New Year’s Eve, I don’t want to consume alcohol; and I always worry about eating raw eggs and possibly getting salmonella. What is my favorite recipe for this nonfattening (well, really a much less fattening drink), nonalcoholic, egg free eggnog that everyone of any age can use to toast in the New Year?
Mix 1 (3oz) package of instant French vanilla pudding or instant plain vanilla pudding or vegetarian instant pudding with 1 cup milk. I use Skim Plus Skim milk. Beat until pudding is thick.
Then add:
1/2 sugar, more or less to taste or use Stevia to taste
2 tsp. vanilla plus 1/2 teaspoon nutmeg and 7 more cups of the milk. [This will make a total of 8 cups of fake eggnog.]Chill and Sprinkle cinnamon on top before serving.
